These are, like a friend of mine said once, cookies that make you a better person! Made with wholemeal spelt, carob, dark chocolate and the not so secret ingredient: brown butter. Brown butter makes everything better. Milk proteins break down into hundreds of flavour compounds and take butter to another level, with a caramel nutty aromas, that pair perfectly with the depth of taste of the wholemeal flours and the bitterness of the dark chocolate.
These cookies have crunchy edges and a soft center, and a combination of textures with melted and hard chocolate chunks. They are finished with a pinch of sea salt.
